Corn Ribs with Coriander Chutney

Crispy, smoky corn ribs with a zesty coriander kick. Perfect as a snack, side or party starter.

Ingredients (Serves 2 - 3)

  • 2 sweetcorn cobs
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • 1/2 tsp chilli powder
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 3 tbsp Safran Vert Coriander Chutney
  • Lime wedges, to serve
  • Fresh coriander, to garnish (optional)

Method

  1. Cut each corn rib into 4 long ribs
  2. In a bowl, mix oil, paprika, chilli powder, garlic powder and salt.
  3. Brush the corn ribs with the mixture. 
  4. Air fry at 200C for 12 - 15 minutes (turning halfway) or roast in the oven at 220C for 20 - 25 minutes until charred and crispy.
  5. Drizzle with coriander chutney, garnish with fresh coriander and serve with lime wedges.

Top tip! 

Add a little extra coriander chutney to a yoghurt dip for the ultimate side!
