Hearty Red Lentil Soup
Hearty, nourishing lentil soup with a fresh burst of flavour.
Ingredients (Serves 4)
- 1 tbsp olive oil
- 1 (red or white) onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 2 garlic cloves, minced
- 1 tsp ground cumin
- 200g red lentils, rinsed
- 1 litre vegetable stock
- Salt and pepper
- 3 tbsp Safran Vert Coriander Chutney
Method
- Heat oil in a pot on medium - high heat. Sauté onion, carrot and celery for 5 minutes.
- Add garlic, cumin and lentils. Stir for 1 minute.
- Pour in stock, bring to a boil, then simmer for 20 - 25 minutes until lentils are soft.
- Season for taste and stir in the coriander chutney just before serving.
Top Tip!
Swirl in extra coriander chutney before serving for a vibrant finish!
