Hearty Red Lentil Soup

Hearty, nourishing lentil soup with a fresh burst of flavour.

Ingredients (Serves 4)

  • 1 tbsp olive oil
  • 1 (red or white) onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 garlic cloves, minced
  • 1 tsp ground cumin
  • 200g red lentils, rinsed
  • 1 litre vegetable stock
  • Salt and pepper 
  • 3 tbsp Safran Vert Coriander Chutney

Method

  1. Heat oil in a pot on medium - high heat. Sauté onion, carrot and celery for 5 minutes.
  2. Add garlic, cumin and lentils. Stir for 1 minute.
  3. Pour in stock, bring to a boil, then simmer for 20 - 25 minutes until lentils are soft.
  4. Season for taste and stir in the coriander chutney just before serving. 

Top Tip!

Swirl in extra coriander chutney before serving for a vibrant finish!
