The Ultimate Chilli Con Carne
A rich, hearty classic with a fresh coriander twist.
Ingredients (Serves 4)
- 1 tbsp olive oil
- 1 white onion, diced
- 2 garlic gloves, minced
- 500g beef mince or your preferred meat
- 1 red pepper, diced
- 1 tbsp tomato puree
- 1 -2 tsp ground cumin
- 1 -2 tsp smoked paprika
- 400g kidney beans, drained
- Salt & pepper
- 3 tbsp Safran Vert Coriander Chutney
Method
- Heat oil in a pan on medium - high heat. Cook the onion and garlic until golden and soft.
- Add beef mince and cook until browned.
- Stir in the tomato puree, cumin and paprika. Cook for 2 minutes.
- Add tomatoes and beans and add in water to make it extra saucy. Simmer for 25 - 30 minutes.
- Swirl in coriander chutney just before serving and voila!
