Vegetarian Samosas

Crispy, golden samosas with a simple spiced filling. Perfect with coriander chutney for dipping. 

Ingredients (makes 8 samosas)

  • 4 sheets filo pastry (for samosa pastry)
  • 2 medium potatoes, boiled and mashed
  • 1/2 cup frozen garden peas
  • 1 tsp cumin seeds
  • 1/2 tsp garam masala
  • Salt & pepper
  • 2 tbsp Safran Vert Coriander Chutney (for filling)
  • Oil, for brushing or frying
  • Safran Vert Coriander Chutney for dipping

Method

  1. Heat oil in a pan. Add cumin seeds and cook for 30 seconds.
  2. Add potatoes, peas, garam masala, salt, pepper and coriander chutney. Mix well and let it cool.
  3. Cut pastry into strips, fill with mixture and fold into triangles.
  4. Brush with oil and bake at 200C for 20 - 25 minutes or deep fry until golden and crisp. 

Top tip!

Serve hot with coriander chutney for the best flavour!
