Vegetarian Samosas
Crispy, golden samosas with a simple spiced filling. Perfect with coriander chutney for dipping.
Ingredients (makes 8 samosas)
- 4 sheets filo pastry (for samosa pastry)
- 2 medium potatoes, boiled and mashed
- 1/2 cup frozen garden peas
- 1 tsp cumin seeds
- 1/2 tsp garam masala
- Salt & pepper
- 2 tbsp Safran Vert Coriander Chutney (for filling)
- Oil, for brushing or frying
- Safran Vert Coriander Chutney for dipping
Method
- Heat oil in a pan. Add cumin seeds and cook for 30 seconds.
- Add potatoes, peas, garam masala, salt, pepper and coriander chutney. Mix well and let it cool.
- Cut pastry into strips, fill with mixture and fold into triangles.
- Brush with oil and bake at 200C for 20 - 25 minutes or deep fry until golden and crisp.
Top tip!
Serve hot with coriander chutney for the best flavour!
